S'more Cupcakes

Hello Darlings!

With it being Bonfire Night super soon, I thought I make some S'more cupcakes.





Ingredients for the cupcakes:

210g of plain flour
1/2 tsp of baking powder
1/4 tsp of baking soda
1/2 tsp of salt
115g of butter
200g of sugar
60g of natural yoghurt
180ml of milk
2 egg whites
40g of cocoa powder 

Ingredients for the topping:

220g of icing sugar 
70g of unsalted butter
some milk
40g of cocoa power
1-2 biscuits
Giant marshmallows


Method:

1. Preheat your oven to 170C (350F).

2. Combine the flour, baking powder, baking soda and salt.



3. In a separate bowl, melt your butter in the microwave.

4. Then add your sugar and whisk until combined, it should look thick.




5. To the butter/sugar mix, vigorously whisk in the yoghurt, milk and egg whites. 





6. Now gently whisk the liquid mixture into the dry mixture. 





7. Add the cocoa powder to your bowl. 




8. Spoon the mixture into your cupcake cases equally and bake for 20 minutes.






9. Allow to cool on a cooling rack.

10. To make the frosting, cream together the butter and icing sugar. Add some milk if it's a little too thick.




11. Then add the cocoa powder or if you would prefer vanilla frosting, add vanilla extract. 




12. Ice your cakes and sprinkle on your crushed up biscuits, I used a honeycomb club biscuit but you can use any biscuit you want. 




13. Now toast your marshmallows, you can either use a blowtorch or a grill for this. 

14. Stick the marshmallows on top of your cupcakes and enjoy!

Chocolate Torte

HELLO DARLINGS!

This recipe is a lot like the Chocolate Brownie recipe, with a few slight changes. 





The ingredients you will need are:

200g of golden caster sugar
4 large eggs 
200g of unsalted butter
200g of plain/dark chocolate
50g of plain flour
50g of ground almonds 


Method:


1. Preheat your oven to 180 degrees celsius / 160 degrees celsius for fan oven / gas mark 4.

2. Whisk together your eggs and sugar in a large bowl until pale and smooth. 





3. Melt the chocolate and butter over a bain-maire.




 4. Add the chocolate/butter mix to your bowl and stir until combined.






5. Now, add the flour and ground almonds to your mixture and combine. 




6. Pour your mixture into a round silicon cake mould. 

7. Bake in the oven for 35-40 minutes until evenly set and with a slight crust on top (it will look similar to the brownie).




8. Enjoy!
