Apple and Cinnamon Muffins Recipe

Hey Guys!

This is a traditional muffin recipe with a little twist, it's super wintery and festive.

Ingredients:

300g of Plain flour
1 tbsp of Baking powder
2 tsp of Ground cinnamon
150g of Brown sugar
2 Medium Granny Smith apples
125g of Butter (melted)
2 Eggs (lightly whisked)
180ml of Milk

For the Apple Sauce:
5-6 tbsp of Caster sugar
1 Medium Granny Smith apple
2 tbsp of Water

Method:

1. So you'll need to preheat your oven to 180 degrees c (350f or Gas mark 4).

2. Now sift your plain flour with the baking powder and cinnamon into a bowl.

3. Take 2 of the apples and, peel and dice them. You want them to be small so they don't all sink to the bottom of the muffins.

4. Add your diced apples and brown sugar to your bowl and stir them in.

5. Now you'll want to get a separate bowl or measuring jug, and whisk together the milk, eggs and butter.

6. Pour your liquid mixture into the dry mixture and stir until just combined. You don't want to over mix it or else the muffins will have a rough texture.

7. Spoon the mixture evenly into muffin cases and bake them in the oven for 20 minutes , until golden.

8. Take the muffins out and leave them to cool. Now you can move onto the apple sauce!

9. Peel and dice an apple, then add it to a saucepan with the water and sugar.

10. Simmer this for 10-15 minutes but keep checking it, you don't want it to burn!

11. When the sauce is done, leave it to cool slightly.

12. Now take a small hole out of your muffins and add in the sauce.

Hope you enjoyed this recipe!

Peanut Butter KitKat Brownie Recipe

Hello Darlings!

This is the same recipe as my Chocolate Walnut Browine recipe but with a twist.

Ingredients:

200g of Plain/dark chocolate
200g of Butter
250g of Caster sugar
3 Large eggs
112g of Plain flour
KitKats (I used 9 Kitkats)
Peanut Butter (Crunchy or smooth)

Method:

1. Preheat your oven to 170 degrees Celsius (350F or gas mark 4)

2. Beat together the eggs and sugar for around 2-3 minutes until light and pale.

3. Melt the butter and chocolate together in a bain marie (glass bowl over a pan of boiling water).

4. Add the melted chocolate to your egg and sugar mixture and mix until well blended.

5. Add the flour, salt and vanilla essence and fold in.

6. Now add in the peanut butter, you can add as much or as little as you like. I use 2-3 heaped tablespoons.

7. Pour 1/2 of the brownie mixture into your tin then line it with KitKats.

8. Pour the other half on top.

9. Place in the preheated oven for 30-35 minutes. For a more gooey brownie I suggest taking it out at 30 minutes.

The brownie should be cracked on top and gooey in the middle.

2. Combine the flour, baking powder, baking soda and salt.

3. In a separate bowl, melt your butter in the microwave.

4. Then add your sugar and whisk until combined, it should look thick.

5. To the butter/sugar mix, vigorously whisk in the yoghurt, milk and egg whites.

6. Now gently whisk the liquid mixture into the dry mixture.

7. Add the cocoa powder to your bowl.

8. Spoon the mixture into your cupcake cases equally and bake for 20 minutes.

9. Allow to cool on a cooling rack.

10. To make the frosting, cream together the butter and icing sugar. Add some milk if it's a little too thick.

11. Then add the cocoa powder or if you would prefer vanilla frosting, add vanilla extract.

12. Ice your cakes and sprinkle on your crushed up biscuits, I used a honeycomb club biscuit but you can use any biscuit you want.

13. Now toast your marshmallows, you can either use a blowtorch or a grill for this.

14. Stick the marshmallows on top of your cupcakes and enjoy!
