Apple and Cinnamon Muffins Recipe

Hey Guys!

This is a traditional muffin recipe with a little twist, it's super wintery and festive.




Ingredients:

300g of Plain flour
1 tbsp of Baking powder
2 tsp of Ground cinnamon
150g of Brown sugar
2 Medium Granny Smith apples
125g of Butter (melted)
2 Eggs (lightly whisked)
180ml of Milk

For the Apple Sauce:
5-6 tbsp of Caster sugar
1 Medium Granny Smith apple
2 tbsp of Water


Method: 

1. So you'll need to preheat your oven to 180 degrees c (350f or Gas mark 4).

2. Now sift your plain flour with the baking powder and cinnamon into a bowl.



3. Take 2 of the apples and, peel and dice them. You want them to be small so they don't all sink to the bottom of the muffins.

4. Add your diced apples and brown sugar to your bowl and stir them in.



5. Now you'll want to get a separate bowl or measuring jug, and whisk together the milk, eggs and butter.

6. Pour your liquid mixture into the dry mixture and stir until just combined. You don't want to over mix it or else the muffins will have a rough texture.



7. Spoon the mixture evenly into muffin cases and bake them in the oven for 20 minutes , until golden.

8. Take the muffins out and leave them to cool. Now you can move onto the apple sauce!



9. Peel and dice an apple, then add it to a saucepan with the water and sugar.

10. Simmer this for 10-15 minutes but keep checking it, you don't want it to burn!

11. When the sauce is done, leave it to cool slightly.

12. Now take a small hole out of your muffins and add in the sauce.
